RECIPE // VEGAN, SUGAR FREE ICY POLES
I recently started doing a vegan / sugar free / pescatarian diet. Whatever you call that. We will see how long that lasts haha ;) Being on this diet means theres not very many yum desert type of things you can eat. So I thought I would try out this icy pole recipe to see if it would please my cravings. They pretty much taste like frozen yoghurt, so good. Here is how to make them:

You Will Need:
1 x tin of coconut milk
2 x bananas
1 x 1/2 cup of blueberries
1 x 1/3 cup of rasberries
1 x 1/4 cup of almond meal
2 x tsp of water
1 x pinch of ground cinnamon
1 x icy pole mould
& paddle pop sticks (i just used legit sticks from the garden)

Preheat oven to 180*C and spread the almond meal out on a tray and bake for a couple minutes until golden.

Mix the almond meal with the ginger and water.

Divide almond meal mix among icy pole moulds. Squish it down to flatten it and freeze for 5 minutes or so.

Chop the bananas up and chuck them in a food processor along with the coconut milk.

Puree until smooth.

Add the berries and whiz them bit by bit until thy are roughly chopped.

Pour the mixture into the icy pole moulds on top of the almond meal mixture.

Stick your sticks in and place in the freezer for 6 hours.

Remove from the moulds by running them under hot water. And they're ready to serve!
